Ingredients (makes 12 mini pies):

- 1 package of frozen puff pastry, thawed
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 package of frozen chopped spinach, thawed and drained
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg, beaten

To make the Mini Spinach and Feta Pies, start by preheating your oven to 400°F. Roll out the puff pastry on a floured surface and cut it into 12 circles using a cookie cutter or a glass. Place the circles in a muffin tin and set aside.
In a skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the spinach and cook for another 2-3 minutes. Remove from heat and stir in the feta cheese, parsley, salt, and pepper.
Spoon the spinach mixture into the pastry cups, filling them about 3/4 full. Brush the beaten egg over the edges of the pastry cups. Bake for 20-25 minutes, or until the pastry is golden brown and the filling is hot and bubbly.
