For the falafel:
- 1 can of chickpeas, drained and rinsed

- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup all-purpose flour
- 1/2 tsp baking powder
- 2 tbsp olive oil
For the pocket:
- 4 whole wheat pita breads
- 1/2 cup hummus
- 1/2 cup tzatziki sauce
- 1/2 cup chopped tomatoes
- 1/2 cup chopped cucumber
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
Instructions:
1. Preheat the oven to 375°F.
2. In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.
3. Add the flour and baking powder to the mixture and pulse again until well combined.
4. Form the mixture into small balls, about 1 inch in diameter.
5. Heat the olive oil in a large skillet over medium heat. Add the falafel balls and cook for 2-3 minutes on each side, until golden brown.
6. Transfer the falafel balls to a baking sheet and bake in the oven for 10-12 minutes, until cooked through.
7. To assemble the pockets, cut the pita breads in half and spread a spoonful of hummus and tzatziki sauce on each half.
8. Add the falafel balls, chopped tomatoes, cucumber, red onion, and parsley to each pocket.
9. Serve immediately and enjoy!
