Linzer Cookies
Linzer Cookies are a classic Austrian dessert that are perfect for any occasion. These delicious cookies are made with a buttery almond dough and filled with raspberry jam. The combination of the sweet and nutty flavors make these cookies irresistible.
To make Linzer Cookies, you will need the following ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup ground almonds
- 1 egg yolk
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup raspberry jam
- Powdered sugar, for dusting
To start, cream together the butter and sugar until light and fluffy. Add in the ground almonds, egg yolk, and vanilla extract and mix until well combined. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the butter mixture and mix until a dough forms.
Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and chill in the refrigerator for at least 30 minutes.
Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper. Roll out one disk of dough on a lightly floured surface to about 1/4 inch thickness. Use a cookie cutter to cut out the desired shapes and place them on the prepared baking sheet. Repeat with the remaining dough, rerolling scraps as needed.
Bake the cookies for 10-12 minutes, or until lightly golden brown. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Once the cookies are cooled, spread a small amount of raspberry jam on the bottom of one cookie and sandwich with another cookie on top. Dust with powdered sugar before serving.
These Linzer Cookies are perfect for any occasion, whether it's a holiday gathering or a simple afternoon snack. The sweet and nutty flavors of the almond dough pair perfectly with the tartness of the raspberry jam. These cookies are sure to be a hit with anyone who tries them.
