- 1 can (14 oz) sweetened condensed milk
- 1 can (12 oz) evaporated milk
- 4 large eggs

- 1 tbsp lime zest
- 1 tsp vanilla extract

- 1 cup granulated sugar
- 1/4 cup water

Instructions:

1. Preheat your oven to 350°F (180°C).
2. In a large bowl, whisk together the sweetened condensed milk, evaporated milk, eggs, lime juice, lime zest, and vanilla extract until well combined.
3. In a small saucepan, combine the granulated sugar and water. Cook over medium heat, stirring constantly, until the sugar has dissolved. Increase the heat to high and cook, without stirring, until the mixture turns a deep amber color, about 5-7 minutes.
4. Pour the caramel into a 9-inch (23 cm) round baking dish, tilting the dish to coat the bottom evenly.
5. Pour the flan mixture over the caramel.
6. Place the baking dish in a larger baking pan and fill the larger pan with hot water until it reaches halfway up the sides of the smaller dish.
7. Bake for 50-60 minutes, or until the flan is set but still jiggles slightly in the center.
8. Remove the baking dish from the water bath and let it cool to room temperature.
9. Once cooled, cover the dish with plastic wrap and refrigerate for at least 2 hours, or overnight.
10. To serve, run a knife around the edge of the flan to loosen it from the dish. Invert the dish onto a serving plate, and carefully lift off the dish to reveal the caramel-coated flan.
