Instructions:
1. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Add the butter and mix until the mixture is crumbly.
2. In a separate bowl, whisk together the egg and lemon juice. Add the wet ingredients to the dry ingredients and mix until a dough forms.
3. Divide the dough into two equal portions and wrap each in plastic wrap. Chill in the refrigerator for at least 30 minutes.
4. While the dough is chilling, make the filling. In a medium saucepan, whisk together the sugar and cornstarch. Add the lemon juice and water and whisk until smooth.
5. Add the egg yolks and butter and whisk until well combined. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
6. Remove from heat and let cool to room temperature.
7. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
8. On a lightly floured surface, roll out one portion of the dough to 1/8-inch thickness. Use a round cookie cutter to cut out circles of dough.
9. Place a small spoonful of filling in the center of each circle. Fold the edges of the dough up and over the filling to form a triangle shape, leaving a small opening in the center.
10. Place the cookies on the prepared baking sheet and bake for 12-15 minutes, or until lightly golden brown.
11. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
