- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract

Instructions:
1. Preheat the oven to 350°F (180°C).

3. Pour the caramel into the bottom of a flan mold or a ceramic dish, swirling it around to coat the bottom and sides. Set aside.
4. In a large mixing bowl, whisk together the sweetened condensed milk, evaporated milk, eggs, lemon juice, lemon zest, and vanilla extract until smooth.
5. Strain the mixture through a fine-mesh sieve into the prepared mold.
6. Place the mold in a large baking dish and fill the dish with hot water until it reaches halfway up the sides of the mold.
7. Bake for 50-60 minutes, or until the flan is set but still jiggly in the center.
8. Remove the mold from the water bath and let it cool to room temperature.
9. Refrigerate the flan for at least 2 hours, or overnight.
10. To serve, run a knife around the edges of the mold to loosen the flan. Invert the mold onto a serving plate and carefully lift it off.
