- 4 large eggs

For the Lemon Curd:

- 1/2 cup fresh lemon juice
- 1 tbsp lemon zest
- 1/2 cup granulated sugar
- 3 large eggs
- 1/4 cup unsalted butter
Cooking Tips:

- Use room temperature eggs for the puffs to ensure they rise properly.
- Make sure to whisk the lemon curd constantly to prevent it from curdling.
- Chill the lemon curd in the fridge for at least an hour before filling the puffs.
Instructions:

1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a medium saucepan, bring the water, butter, and salt to a boil over medium heat. Add the flour and stir until the mixture forms a ball.
3. Remove the pan from the heat and let it cool for a few minutes. Add the eggs one at a time, stirring well after each addition, until the mixture is smooth.
4. Transfer the dough to a piping bag fitted with a large round tip. Pipe 1-inch mounds onto the prepared baking sheet, leaving about 2 inches between each puff.
5. Bake for 20-25 minutes, or until the puffs are golden brown and puffed up. Remove from the oven and let cool completely.
6. To make the lemon curd, whisk together the lemon juice, zest, sugar, and eggs in a medium saucepan. Cook over medium heat, whisking constantly, until the mixture thickens and coats the back of a spoon.
7. Remove the pan from the heat and stir in the butter until it is melted and fully incorporated.
8. Transfer the lemon curd to a bowl and cover with plastic wrap, pressing it directly onto the surface of the curd. Chill in the fridge for at least an hour.
9. To assemble the puffs, cut off the top third of each puff and fill the bottom with a spoonful of lemon curd. Replace the top and dust with powdered sugar.
