Instructions:

1. Preheat your oven to 325°F (160°C).

3. Remove the pan from the heat and let the mixture steep for 10 minutes.

5. Slowly pour the cream mixture into the egg mixture, whisking constantly.
6. Strain the mixture through a fine-mesh strainer into a large measuring cup or bowl with a spout.
7. Divide the mixture evenly among six 6-ounce ramekins.
8. Place the ramekins in a baking dish and fill the dish with enough hot water to come halfway up the sides of the ramekins.
9. Bake for 35-40 minutes, or until the flans are set but still slightly jiggly in the center.
10. Remove the ramekins from the water bath and let them cool to room temperature.
11. Cover the ramekins with plastic wrap and refrigerate for at least 2 hours, or overnight.
12. To serve, run a knife around the edge of each ramekin and invert onto a plate.
