Ingredients (serves 6):

- 6 large eggs
- 1/4 cup mayonnaise
- 1/4 cup kimchi, finely chopped
- 1 tablespoon gochujang (Korean chili paste)
- 1 tablespoon rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- Salt and pepper, to taste
- Chopped scallions and sesame seeds, for garnish


Cooking Tips:

- To make perfect hard-boiled eggs, place the eggs in a pot and cover with cold water. Bring to a boil, then reduce the heat and simmer for 10 minutes. Drain the eggs and rinse with cold water to stop the cooking process.
- To easily peel the eggs, gently tap them on a hard surface to crack the shell, then roll them between your hands to loosen the shell. Peel under running water to remove any remaining shell fragments.
Instructions:

1. Cut the hard-boiled eggs in half lengthwise and remove the yolks. Place the yolks in a bowl and mash with a fork.
2. Add the mayonnaise, kimchi, gochujang, rice vinegar, soy sauce, sesame oil, salt, and pepper to the bowl with the yolks. Mix well until smooth and creamy.
3. Spoon the yolk mixture into the egg white halves, filling them evenly.
4. Garnish with chopped scallions and sesame seeds.
