- Vegetable oil
Instructions:
1. Soak the bulgur wheat in cold water for 30 minutes. Drain and squeeze out any excess water.
2. In a large bowl, mix together the ground meat, soaked bulgur wheat, onion, cumin, coriander, allspice, salt, and black pepper. Knead the mixture with your hands until it is well combined and forms a smooth dough. Add the ice water and knead again until the dough is soft and pliable.
3. In a separate bowl, mix together the filling ingredients.
4. Take a small amount of the Kibbeh dough and shape it into a ball. Make a hole in the center of the ball with your finger, and use your fingers to widen the hole and create a pocket. Fill the pocket with a small amount of the filling mixture, and then close the pocket by pinching the edges together. Repeat this process until all the Kibbeh dough and filling mixture is used up.
5. Heat the vegetable oil in a deep frying pan over medium-high heat. Fry the Kibbeh in batches until they are golden brown and crispy on the outside, about 3-4 minutes per side. Drain on paper towels.
6. Serve the Kibbeh hot with a side of yogurt sauce or tahini sauce.
