Jambalaya-Stuffed Artichokes: A Delicious Cajun Delight
Jambalaya-Stuffed Artichokes are a mouth-watering Cajun dish that combines the flavors of jambalaya with the unique taste of artichokes. Ingredients (serves 4):

- 4 large artichokes
- 1 pound of shrimp, peeled and deveined
- 1 pound of Andouille sausage, sliced
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 can of diced tomatoes
- 1 cup of chicken broth
- 1 tablespoon of Cajun seasoning
- 1 teaspoon of dried thyme
- 1 teaspoon of dried oregano
- Salt and pepper to taste
- 1/4 cup of chopped parsley
- 1/4 cup of chopped green onions
- 1/4 cup of grated Parmesan cheese


Instructions:

1. Preheat the oven to 375°F.
2. Cut off the top of each artichoke and remove the tough outer leaves. Use a spoon to remove the choke and trim the stem.
3. In a large skillet, cook the sausage over medium heat until browned. Add the onion, bell pepper, celery, and garlic and cook until the vegetables are tender.
4. Add the shrimp, diced tomatoes, chicken broth, Cajun seasoning, thyme, oregano, salt, and pepper. Cook for 5-7 minutes until the shrimp are pink and cooked through.
5. Stuff each artichoke with the jambalaya mixture and place them in a baking dish. Cover the dish with foil and bake for 45-50 minutes.
6. Remove the foil and sprinkle the Parmesan cheese over the top of each artichoke. Bake for an additional 5-10 minutes until the cheese is melted and bubbly.
7. Garnish with chopped parsley and green onions before serving.
