Ingredients (serves 4):
- 8 jalapeno peppers
- 4 oz cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp paprika
- Salt and pepper, to taste
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- Oil, for frying
Cooking Tips:
- Wear gloves when handling jalapeno peppers to avoid getting the spicy oils on your skin.
- You can adjust the amount of cheese and spices to your liking.
- Make sure the oil is hot enough before frying to ensure crispy poppers.
Instructions:
1. Preheat the oven to 375°F. Cut the jalapeno peppers in half lengthwise and remove the seeds and membranes.
2. In a mixing bowl, combine the cream cheese, cheddar cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix well.
3. Stuff each jalapeno half with the cheese mixture.
4. Place the flour, beaten eggs, and panko breadcrumbs in separate bowls. Dip each stuffed jalapeno half in the flour, then the eggs, and finally the breadcrumbs.
5. Heat the oil in a deep frying pan over medium-high heat. Fry the jalapeno poppers in batches until golden brown, about 2-3 minutes per side.
6. Transfer the fried poppers to a baking sheet and bake for 10-12 minutes, until the cheese is melted and bubbly.
7. Serve hot and enjoy the spicy and cheesy goodness of these jalapeno poppers!
