For the filling:

- 2 medium potatoes, boiled and mashed
- 1/2 cup green peas, boiled
- 1/2 tsp cumin seeds
- 1/2 tsp coriander powder
- 1/2 tsp garam masala
- 1/2 tsp red chili powder
- Salt to taste
- 2 tbsp vegetable oil
Cooking tips:

- Make sure the dough is not too dry or too wet. It should be soft and pliable.
- Use a non-stick pan to avoid sticking and burning.
- You can adjust the spices according to your taste.
Instructions:

1. In a mixing bowl, combine the flour and salt. Add the oil and mix well. Gradually add the warm water and knead until the dough is smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.
2. In a pan, heat the oil and add the cumin seeds. Once they start to splutter, add the mashed potatoes, green peas, coriander powder, garam masala, red chili powder, and salt. Mix well and cook for 5-7 minutes.
3. Preheat the oven to 375°F.
4. Divide the dough into 8 equal parts. Roll each part into a ball and flatten it into a disc. Place a spoonful of the filling in the center and fold the edges to form a triangle. Pinch the edges to seal.
5. Place the samosa knishes on a baking sheet lined with parchment paper. Brush with oil and bake for 20-25 minutes or until golden brown.
