- 1 cup quinoa, rinsed and drained
- 1 lb ground chicken
- 1/2 cup chopped onion

- 1/4 cup lemon juice
- 1/4 cup olive oil
- 1 tsp salt

- 1 jar grape leaves, drained and rinsed

Cooking Tips:
- To make the quinoa, bring 2 cups of water to a boil in a medium saucepan. Add the quinoa and reduce the heat to low. Cover and simmer for 15-20 minutes, or until the water is absorbed and the quinoa is tender.
- To make the filling, heat the olive oil in a large skillet over medium heat. Add the ground chicken and cook until browned, breaking it up with a wooden spoon. Add the onion, parsley, mint, dill, lemon juice, salt, and pepper. Cook for 5-7 minutes, or until the onion is soft and the herbs are fragrant.
- To assemble the stuffed grape leaves, lay a grape leaf flat on a work surface, shiny side down. Place a spoonful of the filling in the center of the leaf, near the stem end. - To cook the stuffed grape leaves, place them in a large pot, seam side down, in a single layer. Add enough water to cover the grape leaves by about an inch. Place a few lemon slices on top of the grape leaves. Bring the water to a boil, then reduce the heat to low and simmer, covered, for 30-40 minutes, or until the grape leaves are tender and the filling is cooked through.
- Serve the stuffed grape leaves warm or at room temperature, garnished with additional lemon slices and fresh herbs, if desired.
