Greek Spinach and Feta Empanadas

To make the pastry, combine the flour and salt in a large bowl. Add the butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Add the ice water and mix until the dough comes together. Divide the dough into 12 equal pieces and roll each piece into a ball. Cover with plastic wrap and refrigerate for at least 30 minutes.
Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the spinach and cook until heated through, about 3 minutes. Remove from heat and stir in the feta cheese and dill.
Preheat the oven to 375°F. Roll out each ball of dough into a circle about 5 inches in diameter. Spoon about 2 tablespoons of the spinach mixture onto one half of each circle. Fold the other half over and press the edges together to seal. Use a fork to crimp the edges. Brush the empanadas with the beaten egg.
