Ingredients (for 12 servings):

- 1 pound fresh spinach, chopped

- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 2 eggs, beaten
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/2 cup unsalted butter, melted
- 12 sheets phyllo dough


Instructions:

1. Preheat the oven to 375°F.
2. In a large bowl, mix together the spinach, green onions, dill, parsley, feta cheese, ricotta cheese, Parmesan cheese, eggs, salt, pepper, and nutmeg.
3. Brush a sheet of phyllo dough with melted butter. Place another sheet of phyllo dough on top and brush with butter again. Repeat until you have 4 layers of phyllo dough.
4. Cut the phyllo dough into 4 equal strips. Place a spoonful of the spinach mixture at the bottom of each strip. Fold the bottom corner of the strip over the filling to form a triangle. Continue folding the strip back and forth into a triangle shape until you reach the end. Brush the top of the triangle with melted butter.
5. Repeat with the remaining phyllo dough and spinach mixture.
6. Place the triangles on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until golden brown.
7. Serve hot and enjoy!
