Ingredients (serves 4):

For the falafel:

- 1 can of chickpeas, drained and rinsed

- 2 cloves of garlic, minced
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 cup of all-purpose flour
- 1/4 cup of olive oil


For the pita pockets:

- 4 whole wheat pita pockets
- 1/2 cup of Greek yogurt
- 1/2 cup of cucumber, diced
- 1/2 cup of tomato, diced
- 1/4 cup of red onion, diced
- 1/4 cup of fresh parsley, chopped
- Salt and pepper to taste
Instructions:

1. In a food processor, combine the chickpeas, parsley, cilantro, red onion, garlic, cumin, coriander, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.
2. Add the flour to the mixture and pulse again until the mixture is well combined and holds together.
3. Form the mixture into small balls, about the size of a golf ball.
4. Heat the olive oil in a large skillet over medium-high heat. Add the falafel balls to the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.
5. To assemble the pita pockets, cut the pita pockets in half and spread a spoonful of Greek yogurt inside each pocket.
6. Add the cooked falafel balls, diced cucumber, tomato, red onion, and chopped parsley to each pocket.
7. Season with salt and pepper to taste.
