To make Gheimeh, you will need the following ingredients per serving:

- 1/2 cup of split peas
- 1/2 pound of beef stew meat
- 1/2 onion, chopped
- 1/2 cup of tomato sauce
- 1/2 teaspoon of turmeric
- 1/2 teaspoon of cinnamon
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 tablespoon of vegetable oil
- 1/2 tablespoon of dried lime powder (optional)

To start, rinse the split peas and soak them in water for at least an hour. In a pot, heat the vegetable oil and sauté the chopped onions until they are golden brown. Add the beef stew meat and cook until it is browned on all sides. Add the turmeric, cinnamon, salt, and black pepper and stir well.
Next, add the soaked split peas and enough water to cover the ingredients. Bring the mixture to a boil and then reduce the heat to low. Cover the pot and let it simmer for about an hour, or until the split peas are tender.
Once the split peas are tender, add the tomato sauce and dried lime powder (if using). Stir well and let the mixture simmer for another 10-15 minutes.
Gheimeh is typically served with white rice and a side of pickled vegetables. The dish has a rich, savory flavor with a slight tanginess from the tomatoes and dried lime powder. The beef is tender and the split peas add a nice texture to the dish.
