Ingredients (serves 4):
For the dough:
- 2 cups all-purpose flour
- 1/2 cup water

- 1/2 pound shrimp, peeled and deveined

- 1 tablespoon sesame oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon cornstarch
- 1 tablespoon vegetable oil
For the dipping sauce:
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1/2 teaspoon sesame oil
- 1/2 teaspoon sugar
- 1/4 teaspoon red pepper flakes
Instructions:
1. In a large bowl, mix the flour and water until a dough forms. Knead the dough for 5 minutes until it becomes smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes.
2. In a separate bowl, mix the shrimp, garlic, soy sauce, sesame oil, salt, black pepper, and cornstarch until well combined.
3. Roll out the dough into a long cylinder and cut it into small pieces. Roll each piece into a small circle.
4. Place a small spoonful of the shrimp mixture in the center of each circle. Fold the circle in half and pinch the edges together to seal the dumpling.
5. Heat the vegetable oil in a large skillet over medium-high heat. Add the dumplings and cook for 2-3 minutes until the bottoms are golden brown.
6. Add 1/2 cup of water to the skillet and cover it with a lid. Cook for 5-7 minutes until the dumplings are cooked through and the water has evaporated.
7. In a small bowl, mix the soy sauce, rice vinegar, sesame oil, sugar, and red pepper flakes to make the dipping sauce.
8. Serve the Garlic Shrimp Jiaozi hot with the dipping sauce on the side.
