Falafel Stuffed Zucchini with Tzatziki Sauce is a delicious and healthy vegetarian dish that is perfect for any occasion. This dish is made with fresh zucchini, flavorful falafel, and a creamy tzatziki sauce that will leave your taste buds wanting more.
Ingredients (serves 4):
- 4 medium zucchinis
- 1 cup of falafel mix
- 1/4 cup of water
- 1/4 cup of olive oil
- 1/2 cup of Greek yogurt
- 1/2 cup of grated cucumber
- 1 clove of garlic, minced
- 1 tablespoon of lemon juice
- Salt and pepper to taste
To make the tzatziki sauce, mix together the Greek yogurt, grated cucumber, minced garlic, lemon juice, salt, and pepper in a bowl. Cover and refrigerate until ready to serve.
Preheat the oven to 375°F. Cut off the ends of the zucchinis and slice them in half lengthwise. Scoop out the seeds and flesh with a spoon, leaving a hollow center. In a separate bowl, mix together the falafel mix and water until well combined. Stuff the falafel mixture into the hollowed-out zucchinis.
Place the stuffed zucchinis on a baking sheet and drizzle with olive oil. Bake for 25-30 minutes, or until the zucchinis are tender and the falafel is golden brown.
Serve the Falafel Stuffed Zucchini with Tzatziki Sauce on a platter, garnished with fresh herbs and lemon wedges. The dish is a perfect combination of crispy falafel and tender zucchini, with a creamy and tangy tzatziki sauce that ties everything together.
