To make this dish, you will need the following ingredients:

- 1/4 cup of mayonnaise

For the pita chips:

- 4 pita breads, cut into wedges
- 2 tablespoons of olive oil

To make the falafel, combine the chickpeas, onion, parsley, cilantro, garlic, cumin, coriander, cayenne pepper, salt, and pepper in a food processor. Pulse until the mixture is well combined but still slightly chunky. Add the chickpea flour and pulse again until the mixture comes together. Form the mixture into small balls and fry in hot oil until golden brown and crispy.
