- 1 can chickpeas, drained and rinsed
- 1 can diced tomatoes
- 1 cup vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish
For the Turmeric Rice:
- 1 cup basmati rice
- 2 cups water
- 1/2 tsp ground turmeric
- Salt to taste
Instructions:
1. To make the falafel, combine all the ingredients except the olive oil in a food processor and pulse until well combined. Form the mixture into small balls and flatten slightly.
2. Heat the olive oil in a large skillet over medium heat. Add the falafel and cook until golden brown on both sides, about 3-4 minutes per side. Remove from the skillet and set aside.
