Falafel

Ingredients:

- 1 cup dried chickpeas
- 1 onion, chopped
- 3 cloves garlic, minced
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh cilantro, chopped
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/2 tsp baking powder
- 4-6 tbsp all-purpose flour
- Oil for frying


Instructions:

1. Soak the chickpeas in water overnight. Drain and rinse the chickpeas.
2. In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt, black pepper, and cayenne pepper. Pulse until the mixture is finely chopped but not pureed.
3. Transfer the mixture to a bowl and stir in the baking powder and flour. The mixture should be thick enough to form into balls.
4. Heat the oil in a deep fryer or a large pot over medium-high heat.
5. Form the mixture into small balls, about the size of a ping pong ball.
6. Fry the falafel in batches until golden brown, about 3-4 minutes per batch.
7. Drain the falafel on paper towels and serve hot with pita bread, hummus, and tzatziki sauce.
