Ingredients:
For the Macarons:
- 1 cup powdered sugar
- 3/4 cup almond flour
- 2 large egg whites, room temperature
- 1/4 cup granulated sugar
- 1/4 tsp cream of tartar
- 1/4 tsp nutmeg
- Yellow food coloring (optional)
For the Filling:
- 1/2 cup unsalted butter, room temperature
- 2 cups powdered sugar
- 1/4 cup eggnog
- 1/4 tsp nutmeg
Instructions:
1. Preheat your oven to 300°F. Line two baking sheets with parchment paper.
2. In a medium bowl, sift together the powdered sugar and almond flour. Set aside.
3. In a large bowl, beat the egg whites with an electric mixer until foamy. Add the cream of tartar and continue to beat until soft peaks form.
4. Gradually add the granulated sugar and continue to beat until stiff peaks form. Add the nutmeg and food coloring (if using) and beat until combined.
5. Using a spatula, gently fold in the almond flour mixture until the batter is smooth and shiny.
6. Transfer the batter to a piping bag fitted with a round tip. Pipe 1-inch circles onto the prepared baking sheets, leaving about 1 inch between each macaron.
7. Tap the baking sheets on the counter a few times to release any air bubbles. Let the macarons sit at room temperature for 30 minutes to form a skin.
8. Bake the macarons for 15-18 minutes, or until they are set and slightly golden. Let them cool completely on the baking sheets.
9. While the macarons are cooling, make the filling. In a large bowl, beat the butter until creamy. Gradually add the powdered sugar and beat until smooth. Add the eggnog and nutmeg and beat until combined.
10. Transfer the filling to a piping bag fitted with a round tip. Pipe a small amount of filling onto the flat side of one macaron and sandwich it with another macaron.
11. Repeat with the remaining macarons and filling.
