Ingredients (serves 8-10):

- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon violet extract
- Purple food coloring (optional)

For the frosting:

- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon violet extract
- 1-2 tablespoons heavy cream
Instructions:

1. Preheat your oven to 350°F. Grease and flour two 8-inch round cake pans.
2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
4. Add the dry ingredients to the butter mixture in three parts, alternating with the milk, beginning and ending with the dry ingredients. Stir in the vanilla and violet extracts.
5. If desired, add a few drops of purple food coloring to the batter to enhance the violet color.
6. Divide the batter evenly between the prepared pans and bake for 20-25 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
7. Allow the cakes to cool in the pans for 10 minutes, then remove them from the pans and cool completely on wire racks.
8. To make the frosting, beat the butter until light and fluffy. Gradually add the powdered sugar, vanilla extract, and violet extract, beating until smooth. Add enough heavy cream to achieve a spreadable consistency.
9. Place one cake layer on a serving plate and spread a layer of frosting on top. Place the second cake layer on top and frost the top and sides of the cake.
10. Decorate the cake with fresh violets or other edible flowers, if desired.
This Easter Violet Cake is a perfect dessert for any springtime occasion. The light and fluffy sponge cake is perfectly complemented by the creamy and sweet frosting, with just a hint of delicate violet flavor. The beautiful purple color and delicate floral decorations make this cake a showstopper on any dessert table.
