Coconut Lime Biscotti

Coconut Lime Biscotti - A Deliciously Crunchy Treat
Coconut Lime Biscotti is a perfect combination of tropical flavors and crunchy texture. This Italian biscuit is twice-baked, making it crispy and perfect for dipping in coffee or tea. This recipe is easy to make and yields about 24 biscotti.

Ingredients:

- 2 cups all-purpose flour
- 1 cup shredded coconut
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1 tablespoon baking powder
- 1 tablespoon lime zest
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract

Cooking Tips:

- Use unsweetened shredded coconut to avoid making the biscotti too sweet.
- Make sure the butter is softened before mixing it with the sugar.
- Use a microplane to zest the lime for a fine texture.
Instructions:

1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
2. In a large bowl, mix together the flour, shredded coconut, baking powder, and salt.
3. In another bowl, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, and beat until well combined.
4. Add the lime zest and vanilla extract to the wet ingredients and mix well.
5. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
6. Divide the dough in half and shape each half into a log, about 12 inches long and 2 inches wide.
7. Place the logs on the prepared baking sheet and bake for 25-30 minutes, or until lightly golden brown.
8. Remove the logs from the oven and let them cool for 10 minutes. Reduce the oven temperature to 325°F.
9. Using a serrated knife, slice the logs into 1/2 inch thick slices. Place the slices back on the baking sheet and bake for an additional 10-15 minutes, or until golden brown and crispy.
10. Let the biscotti cool completely before serving.
