Ingredients (serves 4):
For the dumplings:
- 1 lb. shrimp, peeled and deveined
- 1/2 cup coconut milk
- 1/4 cup green onions, chopped
- 1/4 cup cilantro, chopped
- 1 tbsp. red curry paste
- 1 tbsp. fish sauce
- 1 tbsp. soy sauce
- 1 tbsp. cornstarch
- 1 tbsp. sugar
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 24 wonton wrappers
For the dipping sauce:
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1 tbsp. honey
- 1 tbsp. sesame oil
- 1 tbsp. green onions, chopped
- 1 tbsp. cilantro, chopped
- 1/2 tsp. red pepper flakes
Instructions:
1. In a food processor, pulse the shrimp until finely chopped. Add the coconut milk, green onions, cilantro, red curry paste, fish sauce, soy sauce, cornstarch, sugar, salt, and black pepper. Pulse until well combined.
2. Place a heaping teaspoon of the shrimp mixture in the center of each wonton wrapper. Brush the edges with water and fold the wrapper in half, pressing the edges together to seal.
3. Bring a large pot of water to a boil. Add the dumplings and cook for 3-4 minutes, or until they float to the surface.
4. While the dumplings are cooking, make the dipping sauce. In a small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, green onions, cilantro, and red pepper flakes.
5. Serve the dumplings hot with the dipping sauce on the side.
