Classic French Macarons

9. While the cookies are cooling, make the buttercream filling. In a large bowl, beat the butter on medium speed until creamy. Add the powdered sugar, vanilla extract, and heavy cream, and beat until smooth and fluffy.
10. Once the cookies are cool, match them up by size and spread a small amount of buttercream on the flat side of one cookie. Sandwich it together with another cookie, pressing gently to spread the filling to the edges.
