- 1 block of firm tofu, drained and pressed

- 1 red bell pepper, sliced

- 1/4 cup of olive oil
- 1/4 cup of orange juice
- 1/4 cup of lime juice
- 1 tbsp. of honey
- 1 tsp. of cumin
- 1 tsp. of smoked paprika
- Salt and pepper to taste
- 8-10 flour tortillas
- Optional toppings: avocado, cilantro, salsa, sour cream
Instructions:
1. In a large bowl, whisk together the olive oil, orange juice, lime juice, honey, cumin, smoked paprika, salt, and pepper.
2. Cut the tofu into thin slices and add them to the marinade. Let the tofu marinate for at least 30 minutes, or up to 2 hours.
3. Heat a large skillet over medium-high heat. Add the marinated tofu and cook for 5-7 minutes on each side, until golden brown. Remove the tofu from the skillet and set it aside.
4. Add the sliced mushrooms, bell peppers, and onion to the skillet. Cook for 5-7 minutes, until the vegetables are tender and slightly charred.
5. Warm the tortillas in the microwave or on a skillet.
6. To assemble the fajitas, place a few slices of tofu and a spoonful of the vegetable mixture onto each tortilla. Top with your desired toppings, such as avocado, cilantro, salsa, or sour cream.
