- 1 green bell pepper, sliced

- 1/4 cup fresh orange juice
- 2 tbsp. olive oil
- 2 garlic cloves, minced
- 1 tsp. ground cumin
- 1 tsp. chili powder
- Salt and pepper, to taste
- 8-10 flour tortillas
- Optional toppings: avocado, cilantro, sour cream, shredded cheese


Instructions:

1. In a large bowl, whisk together the lime juice, orange juice, olive oil, garlic, cumin, chili powder, salt, and pepper. Add the fish fillets and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
2. Preheat a grill or grill pan to medium-high heat. Remove the fish from the marinade and discard the marinade. Grill the fish for 3-4 minutes per side, or until cooked through. Remove from the grill and let rest for a few minutes.
3. While the fish is cooking, sauté the bell peppers, onion, and jalapeño in a large skillet over medium-high heat until tender and slightly charred, about 5-7 minutes.
4. Warm the tortillas on the grill or in the microwave. To assemble the fajitas, place a few pieces of fish and some of the sautéed vegetables on each tortilla. Top with your desired toppings, such as avocado, cilantro, sour cream, or shredded cheese.
