3. Add the egg yolk and ice water to the bowl and mix until the dough comes together. Turn the dough out onto a floured surface and knead it a few times until it's smooth.
4. Roll the dough out into a circle that's about 12 inches in diameter. Transfer the dough to a 9-inch tart pan and press it into the bottom and up the sides of the pan.
