Ingredients (for 12 servings):
For the macaron shells:
- 1 cup almond flour
- 1 1/2 cups powdered sugar
- 3 egg whites
- 1/4 cup granulated sugar
- 1/2 tsp cinnamon
- 1/4 tsp cream of tartar
For the cinnamon roll filling:
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1 tbsp cinnamon
- 1/4 tsp salt
For the cream cheese frosting:
- 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
Instructions:
1. Preheat your oven to 300°F and line a baking sheet with parchment paper.
2. In a large bowl, sift together the almond flour, powdered sugar, and cinnamon. Set aside.
3. In a separate bowl, beat the egg whites until frothy. Add the cream of tartar and continue to beat until soft peaks form.
4. Gradually add the granulated sugar to the egg whites, one tablespoon at a time, while continuing to beat until stiff peaks form.
5. Gently fold the almond flour mixture into the egg whites until fully combined.
6. Transfer the mixture to a piping bag and pipe 1-inch circles onto the prepared baking sheet.
7. Tap the baking sheet on a flat surface to release any air bubbles and let the macarons rest for 30 minutes.
8. Bake the macarons for 15-18 minutes, or until they are set and slightly golden.
9. While the macarons are baking, prepare the cinnamon roll filling by mixing together the butter, brown sugar, cinnamon, and salt until smooth.
10. Once the macarons are done baking, let them cool completely before removing them from the baking sheet.
11. To assemble the macarons, spread a small amount of the cinnamon roll filling onto the flat side of one macaron shell and sandwich it with another shell.
12. To make the cream cheese frosting, beat together the cream cheese, butter, powdered sugar, and vanilla extract until smooth.
13. Pipe a small amount of the cream cheese frosting onto the top of each macaron and sprinkle with a pinch of cinnamon.
14. Serve and enjoy!
