Ingredients:
- 10 tomatillos, husked and rinsed
- 2 jalapeño peppers, seeded and chopped
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/4 cup chopped fresh cilantro
- 1/4 cup lime juice
- 1 tsp salt
- 1/2 tsp cumin
Instructions:
1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
2. Cut the tomatillos in half and place them cut-side down on the baking sheet. Add the jalapeño peppers and onion to the sheet.
3. Roast the vegetables in the oven for 15-20 minutes, or until they are soft and slightly charred.
4. Remove the vegetables from the oven and let them cool for a few minutes.
5. In a food processor or blender, combine the roasted vegetables, garlic, cilantro, lime juice, salt, and cumin. Pulse until the mixture is chunky but well combined.
6. Transfer the salsa to a large pot and bring it to a boil over medium-high heat.
7. Reduce the heat to low and simmer the salsa for 10-15 minutes, stirring occasionally.
8. While the salsa is simmering, prepare your canning jars and lids according to the manufacturer's instructions.
9. Once the salsa is done simmering, ladle it into the prepared jars, leaving 1/2 inch of headspace.
10. Wipe the rims of the jars with a clean, damp cloth and place the lids on top.
11. Process the jars in a boiling water canner for 15 minutes.
12. Remove the jars from the canner and let them cool on a wire rack.
