Instructions:

1. Preheat your oven to 300°F and line a baking sheet with parchment paper.

3. In a large bowl, beat the egg whites until foamy. Add the cream of tartar and continue to beat until soft peaks form.
4. Gradually add the granulated sugar and continue to beat until stiff peaks form.
5. Add the mint extract and a few drops of green food coloring to the egg white mixture and gently fold in.
6. Add the almond flour mixture to the egg white mixture and fold in until the batter is smooth and shiny.
7. Transfer the batter to a piping bag fitted with a round tip.
