Instructions:

1. Preheat your oven to 300°F and line a baking sheet with parchment paper.
2. In a large bowl, sift together the almond flour and powdered sugar.
3. In a separate bowl, beat the egg whites until they form stiff peaks. Gradually add in the granulated sugar and almond extract, and continue to beat until the mixture is glossy and forms stiff peaks.
4. Gently fold the almond flour mixture into the egg white mixture, being careful not to overmix. Add a few drops of red food coloring and mix until the batter is a light pink color.
5. Transfer the batter to a piping bag and pipe small circles onto the prepared baking sheet. Tap the baking sheet on the counter a few times to release any air bubbles.
6. Bake the macarons for 15-18 minutes, or until they are set and have formed a "foot" around the edges. Let them cool completely on the baking sheet.
7. While the macarons are cooling, make the cherry filling. In a small saucepan, combine the cherries, sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until the mixture thickens and the cherries have broken down.
8. Once the macarons are cool, carefully remove them from the parchment paper. Spoon a small amount of the cherry filling onto the flat side of one macaron, and sandwich it with another macaron.
9. Serve the Cherry Almond Macarons immediately, or store them in an airtight container in the refrigerator for up to 3 days.
