Cauliflower Egg Rolls

To start, heat the vegetable oil in a pan over medium heat. Add the chopped vegetables and sauté for 5-7 minutes until they are tender. In a separate bowl, mix together the soy sauce, hoisin sauce, and rice vinegar. Add the sauce to the pan and stir until the vegetables are coated.
In a small bowl, mix together the cornstarch and water to create a slurry. Add the slurry to the pan and stir until the sauce thickens. Remove the pan from the heat and let the mixture cool.
