Ingredients (serves 4):

- 1 pound large shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced tomatoes
- 4 large flour tortillas
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh parsley

Cooking Tips:

- Make sure to use large shrimp for this recipe, as they will hold up better in the fold.
- If you don't have Cajun seasoning, you can make your own by combining paprika, garlic powder, onion powder, cayenne pepper, and salt.
- Be sure to dice all of your vegetables into small, uniform pieces so that they cook evenly.
Instructions:

1. In a large bowl, toss the shrimp with the Cajun seasoning until well coated.
2. Heat the olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove from the skillet and set aside.
3. In the same skillet, add the diced bell peppers, onion, and celery. Cook for 5-7 minutes, until the vegetables are tender.
4. Add the diced tomatoes to the skillet and cook for an additional 2-3 minutes, until heated through.
5. To assemble the Cajun Shrimp Fold, place a flour tortilla on a flat surface. Spoon some of the vegetable mixture onto the center of the tortilla, leaving a border around the edges. Top with some of the cooked shrimp, shredded cheddar cheese, and chopped parsley.
6. Fold the sides of the tortilla over the filling, then roll up tightly from the bottom. Repeat with the remaining tortillas and filling.
7. Heat a large skillet over medium heat. Place the folded tortillas seam-side down in the skillet and cook for 2-3 minutes per side, until golden brown and crispy.
8. Serve the Cajun Shrimp Fold hot, garnished with additional chopped parsley if desired.
Appearance and Taste:
The Cajun Shrimp Fold is a beautiful dish with vibrant colors from the diced bell peppers and tomatoes. The spicy Cajun seasoning adds a kick of heat that is perfectly balanced by the savory shrimp and melted cheddar cheese. The folded tortilla is crispy on the outside and soft on the inside, making for a satisfying texture that complements the flavors of the filling.
