For the fajitas:
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 2 tbsp. olive oil
- Salt and pepper, to taste
- 8 flour tortillas
For the avocado crema:
- 2 ripe avocados
- 1/4 cup sour cream
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- Salt and pepper, to taste
Instructions:
1. Preheat the oven to 400°F.
2. In a small bowl, mix together the paprika, garlic powder, onion powder, cumin, salt, and black pepper.
3. Rub the spice mixture onto both sides of the tilapia fillets.
4. Heat the olive oil in a large skillet over medium-high heat. Add the tilapia fillets and cook for 3-4 minutes on each side, until blackened and cooked through.
