- 8 rice paper wrappers

- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup chopped peanuts
- 1/4 cup hoisin sauce
- 1/4 cup peanut butter
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 tablespoon sesame oil
Instructions:
1. Prepare all the vegetables and herbs and set them aside.
2. In a small bowl, whisk together the hoisin sauce, peanut butter, soy sauce, rice vinegar, honey, and sesame oil until smooth.
3. Fill a large bowl with warm water. Dip one rice paper wrapper into the water for a few seconds until it softens.
4. Place the softened wrapper on a clean surface. Add a few slices of avocado and a small amount of each vegetable and herb on top of the wrapper.
5. Fold the sides of the wrapper over the filling, then roll it up tightly.
6. Repeat with the remaining wrappers and filling.
