Ingredients:

- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup unsalted butter, chilled and cut into small pieces
- 8 ounces cream cheese, chilled and cut into small pieces
- 1/2 cup apricot jam
- 1/2 cup chopped almonds
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon

Instructions:

1. In a large bowl, whisk together the flour and salt. Add the butter and cream cheese and use a pastry cutter or your hands to mix until the dough comes together.
2. Divide the dough into four equal pieces and shape each into a disk. Wrap each disk in plastic wrap and refrigerate for at least 30 minutes.
3. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
4. In a small bowl, mix together the apricot jam and chopped almonds.
5. In another small bowl, mix together the sugar and cinnamon.
6. On a lightly floured surface, roll out one of the dough disks into a 10-inch circle. Spread a quarter of the apricot-almond mixture over the dough, leaving a 1/2-inch border around the edge. Sprinkle a quarter of the cinnamon-sugar mixture over the apricot-almond mixture.
7. Use a sharp knife or pizza cutter to cut the dough into 12 wedges. Roll up each wedge, starting from the wide end and tucking the point underneath. Place the rugelach on the prepared baking sheet, seam side down.
8. Repeat with the remaining dough disks and filling.
9. Bake the rugelach for 20-25 minutes, or until golden brown. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
