Vegetable Biryani

To make Vegetable Biryani, you will need the following ingredients per serving:

- 1/2 cup basmati rice
- 1/2 cup mixed vegetables (such as carrots, peas, potatoes, and bell peppers)
- 1/4 cup chopped onion
- 1/4 cup chopped tomato
- 1/2 tsp ginger paste
- 1/2 tsp garlic paste
- 1/2 tsp cumin seeds
- 1/2 tsp coriander powder
- 1/4 tsp turmeric powder
- 1/4 tsp red chili powder
- 1/4 tsp garam masala
- 1 tbsp oil
- Salt to taste
- Fresh cilantro for garnish


To start, rinse the rice in cold water until the water runs clear. Soak the rice in water for 30 minutes. In a separate pan, heat the oil and add the cumin seeds. Once they start to sizzle, add the chopped onion and sauté until golden brown. Add the ginger and garlic paste and sauté for another minute. Add the chopped tomato and cook until it becomes soft and mushy.
Add the mixed vegetables and all the spices (coriander powder, turmeric powder, red chili powder, and garam masala) to the pan. Mix well and cook for 5-7 minutes until the vegetables are tender.
Drain the soaked rice and add it to the pan with the vegetables. Mix well and add 1 cup of water. Bring the mixture to a boil, then reduce the heat to low and cover the pan with a lid. Cook for 15-20 minutes until the rice is fully cooked and the water has been absorbed.
