Vegan Cholent

Vegan Cholent: A Hearty and Delicious Plant-Based Stew
Looking for a hearty and satisfying vegan dish that's perfect for chilly nights? Look no further than Vegan Cholent! This traditional Jewish stew is typically made with meat, but our plant-based version is just as delicious and satisfying.

To make Vegan Cholent, you'll need:

- 1 cup dried navy beans
- 1 cup dried kidney beans
- 1 cup barley
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 large carrots, chopped
- 2 large potatoes, chopped
- 1 tablespoon paprika
- 1 tablespoon cumin
- 1 tablespoon dried thyme
- 1 tablespoon salt
- 1 teaspoon black pepper
- 6 cups vegetable broth
- 1 cup water

To start, rinse the beans and soak them overnight in water. In the morning, drain the beans and add them to a large pot with the barley, onion, garlic, carrots, potatoes, paprika, cumin, thyme, salt, and pepper. Pour in the vegetable broth and water, and stir to combine.
Bring the mixture to a boil, then reduce the heat to low and let it simmer for 6-8 hours, stirring occasionally. The longer you let it cook, the more flavorful it will be!
When the Vegan Cholent is ready, it should be thick and hearty, with tender beans and vegetables in a rich, savory broth. Serve it hot with crusty bread or matzo for a truly satisfying meal.
In two words, this dish is: Hearty and Savory.
The three main ingredients are: Beans, Barley, and Vegetables.
