- Salt and pepper to taste
Instructions:
1. In a large pot, heat some oil and sauté the onion, garlic, and chili until fragrant.
2. Add the lemongrass, kaffir lime leaves, fish sauce, palm sugar, lime juice, coconut milk, and stock. Bring to a boil and let it simmer for 10 minutes.
3. Add the mixed vegetables and seafood and cook for another 5-7 minutes until the seafood is cooked through.
