- 1 lb. beef stew meat, cut into bite-sized pieces
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups dried navy beans, soaked overnight
- 2 cups beef broth
- 1 cup water
- 1 can diced tomatoes
- 1 tbsp. paprika
- 1 tsp. cumin
- 1 tsp. chili powder
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 jalapeno pepper, seeded and chopped
- 1/4 cup chopped fresh cilantro


Instructions:

1. Preheat your oven to 250°F.
2. In a large Dutch oven or oven-safe pot, brown the beef over medium-high heat. Remove the beef from the pot and set it aside.
3. Add the onion and garlic to the pot and sauté until the onion is translucent.
4. Add the soaked navy beans, beef broth, water, diced tomatoes, paprika, cumin, chili powder, salt, black pepper, and jalapeno pepper to the pot. Stir to combine.
5. Add the browned beef back to the pot and stir to combine.
6. Cover the pot and place it in the preheated oven. Cook for 6-8 hours, or until the beans are tender and the beef is cooked through.
7. Once the cholent is done cooking, remove it from the oven and stir in the chopped cilantro.
8. Serve hot and enjoy!
