Ingredients:

- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can diced tomatoes
- 1 can black beans, drained and rinsed
- 1 cup chicken broth
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper, to taste
- 2 tbsp olive oil


To start, heat the olive oil in a large pot over medium-high heat. Add the chicken and cook until browned on all sides, about 5 minutes. Remove the chicken from the pot and set aside.
In the same pot, add the onion, garlic, and bell peppers. Cook until the vegetables are tender, about 5 minutes. Add the diced tomatoes, black beans, chicken broth, chili powder, cumin, paprika, salt, and pepper. Stir to combine.
Add the chicken back to the pot and bring the mixture to a boil. Reduce the heat to low and let the stew simmer for 30 minutes, or until the chicken is cooked through and the vegetables are tender.
