Sephardic Fish Tagine

Ingredients:

- 1 lb. of fresh fish (halibut, cod, or sea bass)

- 1/2 cup of green olives, pitted
- 1/2 cup of raisins

- 1 tsp. of ground coriander
- 1 tsp. of paprika
- Salt and pepper to taste


Instructions:

1. Preheat the oven to 375°F.
2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent.
3. Add the red and yellow bell peppers and sauté for another 5 minutes.
4. Add the diced tomatoes, olives, raisins, water, cumin, coriander, paprika, salt, and pepper. Stir well and bring to a boil.
5. Reduce the heat and let the mixture simmer for 10 minutes.
6. Place the fish in a baking dish and pour the tomato mixture over the fish.
7. Cover the dish with foil and bake for 20-25 minutes, or until the fish is cooked through.
8. Serve the Sephardic Fish Tagine hot with a side of couscous or rice.
