Ingredients (serves 4):

- 2 boneless, skinless chicken breasts
- 1/2 cup Marsala wine
- 1/4 cup honey
- 1/4 cup soy sauce
- 1/4 cup olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 8 flour tortillas
- 2 cups shredded cheddar cheese
- Salt and pepper to taste

Cooking Tips:

- To save time, you can use pre-cooked chicken or rotisserie chicken.
- Make sure to slice the vegetables thinly and evenly to ensure even cooking.
- Use a non-stick pan or griddle to prevent sticking.
Instructions:

1. In a small bowl, whisk together the Marsala wine, honey, soy sauce, and olive oil. Set aside.
2. Season the chicken breasts with salt and pepper. Heat a large skillet over medium-high heat and add the chicken. Cook for 5-7 minutes on each side, or until cooked through. Remove from the pan and let rest for 5 minutes before slicing into thin strips.
3. In the same pan, add the sliced peppers and onions. Cook for 5-7 minutes, or until softened and slightly charred.
4. Add the sliced chicken back to the pan with the peppers and onions. Pour the Marsala glaze over the top and stir to coat everything evenly. Cook for an additional 2-3 minutes, or until the glaze has thickened and the chicken and vegetables are coated.
5. Heat a separate non-stick pan or griddle over medium-high heat. Place a tortilla on the pan and sprinkle with shredded cheese. Add a spoonful of the chicken and vegetable mixture on top of the cheese. Top with another tortilla and press down lightly with a spatula. Cook for 2-3 minutes on each side, or until the cheese is melted and the tortilla is crispy.
6. Repeat with the remaining tortillas and chicken mixture.
7. Serve hot with your favorite toppings, such as sour cream, guacamole, or salsa.
