Mapo Tofu

- 1 block of soft tofu (14 oz)
- 1/2 lb ground pork
- 2 tbsp vegetable oil
- 1 tbsp Sichuan peppercorns
- 2 tbsp chili bean paste
- 1 tbsp fermented black beans
- 1 tbsp soy sauce
- 1 tbsp sugar
- 1/2 cup chicken broth
- 2 cloves garlic, minced
- 1 green onion, chopped
- 1 tsp cornstarch
- 1 tbsp water
To start, cut the tofu into small cubes and set aside. In a wok or large skillet, heat the vegetable oil over medium-high heat. Add the Sichuan peppercorns and stir-fry for a few seconds until fragrant. Add the ground pork and stir-fry until it is no longer pink.
Next, add the chili bean paste, fermented black beans, soy sauce, sugar, and chicken broth. Stir well and bring to a boil. Add the tofu cubes and gently stir to coat them with the sauce. Reduce the heat to low and let the tofu simmer for 5-7 minutes.
In a small bowl, mix the cornstarch and water to make a slurry. Add the slurry to the wok and stir gently to thicken the sauce. Finally, add the minced garlic and chopped green onion and stir well.
