Ma La Dofu

To make Ma La Dofu, you will need the following ingredients per serving:

- 1 block of soft tofu
- 1 tablespoon of vegetable oil
- 1 tablespoon of Sichuan peppercorns
- 1 tablespoon of dried chili peppers
- 1 tablespoon of minced garlic
- 1 tablespoon of minced ginger
- 1 tablespoon of soy sauce
- 1 tablespoon of Chinese cooking wine
- 1 tablespoon of sugar
- 1/4 cup of chicken or vegetable broth
- 1 tablespoon of cornstarch
- 1 tablespoon of water
- 1 green onion, chopped


To start, cut the tofu into small cubes and set aside. In a wok or large skillet, heat the vegetable oil over medium-high heat. Add the Sichuan peppercorns and dried chili peppers and stir-fry for about 30 seconds until fragrant. Add the minced garlic and ginger and stir-fry for another 30 seconds.
Next, add the soy sauce, Chinese cooking wine, sugar, and chicken or vegetable broth to the wok. Stir everything together and bring the sauce to a simmer. Add the tofu cubes to the wok and gently stir to coat them in the sauce.
In a small bowl, mix together the cornstarch and water to make a slurry. Add the slurry to the wok and stir gently to thicken the sauce. Once the sauce has thickened, turn off the heat and sprinkle the chopped green onion over the top of the Ma La Dofu.
