Ma Po Dou Fu

Ingredients (serves 4):

- 1 block of soft tofu (14 oz)
- 1/2 lb ground pork
- 2 tbsp vegetable oil
- 1 tbsp Sichuan peppercorns
- 2 tbsp chili bean paste
- 1 tbsp fermented black beans
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- 1/2 cup chicken broth
- 1 tbsp soy sauce
- 1 tsp sugar
- 1 tbsp cornstarch
- 2 green onions, chopped


To make Ma Po Dou Fu, start by cutting the tofu into small cubes and set aside. In a wok or large skillet, heat the vegetable oil over medium-high heat. Add the Sichuan peppercorns and stir-fry for 30 seconds until fragrant. Add the ground pork and stir-fry until browned. Add the chili bean paste, fermented black beans, garlic, and ginger. Stir-fry for another minute until fragrant.
Add the chicken broth, soy sauce, and sugar. Bring to a boil and then reduce the heat to low. Add the tofu cubes and gently stir to combine. Let the tofu simmer for 5 minutes.
In a small bowl, mix the cornstarch with 2 tbsp of water. Add the cornstarch mixture to the wok and stir gently until the sauce thickens. Add the chopped green onions and stir to combine.
Ma Po Dou Fu is ready to serve! This dish is best served with steamed rice. The appearance of this dish is a soft and silky tofu with a spicy and flavorful sauce.
